Mushroom Garlic Bread

Savory mushrooms, onions, and garlic piled onto crispy bread.

Serves 4 30 min

Ingredients

  • ·1 baguette, sliced into ½-inch pieces
  • ·1 small onion, finely diced
  • ·1 ½ cups mozzarella cheese, shredded
  • ·2 cups mushrooms, thinly sliced
  • ·3 cloves garlic, minced
  • ·2 tbsp butter
  • ·2 tbsp fresh parsley, chopped, plus more for garnish
  • ·2 tbsp olive oil, for brushing the bread
  • ·½ tsp salt, or to taste
  • ·¼ tsp black pepper, or to taste
  • ·¼ tsp red pepper flakes

Instructions

  1. 1

    Preheat the oven to 375°F.

  2. 2

Slice the baguette into even ½-inch pieces and place them on a baking sheet.

  3. 3

Brush each slice lightly with olive oil, then bake for 3–4 minutes, or until the bread is lightly toasted but not fully crisp.

  4. 4

While the bread is toasting, melt the butter in a pan over medium-high heat.

  5. 5

Add the diced onion and cook for 3–4 minutes, or until translucent.

  6. 6

Add the sliced mushrooms, minced garlic, salt, pepper, and red pepper flakes. Sauté for 8–10 minutes, stirring occasionally, until the mushrooms are tender and most of the moisture has evaporated.

  7. 7

Stir in the chopped parsley, then remove the pan from the heat.

  8. 8

Spoon the mushroom and onion mixture evenly over the toasted baguette slices.

  9. 9

Top each piece generously with shredded mozzarella cheese.

  10. 10

Return the assembled bread to the oven and bake for 7–8 minutes, or until the cheese is melted and bubbly.

  11. 11

Garnish with extra fresh parsley and serve warm.
