Bruschetta
Toasted country bread topped with ripe tomatoes, basil, and good olive oil.
Ingredients
- ·1 baguette
- ·4 medium Roma tomatoes, diced
- ·1 cup fresh mozzarella, diced
- ·¼ cup fresh basil, chopped
- ·2–3 tbsp olive oil, plus more for brushing the bread
- ·2 cloves garlic, peeled
- ·Salt to taste
- ·Black pepper to taste
- ·Balsamic glaze, for topping
Instructions
- 1
Preheat the oven to 400°F.
- 2
Slice the baguette into even pieces and place them on a baking sheet.
- 3
Brush each slice lightly with olive oil, then bake for 6–8 minutes, or until the bread is golden and crispy.
- 4
While the bread is still warm, rub a peeled garlic clove over the front and back of each slice. The crisp ridges of the bread will grate the garlic into it.
- 5
In a bowl, combine the diced tomatoes, mozzarella, and basil. Add olive oil, salt, and black pepper, then gently mix everything together.
- 6
Spoon the tomato and mozzarella mixture onto each piece of toasted bread.
- 7
Drizzle balsamic glaze over the top and serve immediately.
