Bruschetta

Toasted country bread topped with ripe tomatoes, basil, and good olive oil.

Ingredients

  • ·1 baguette
  • ·4 medium Roma tomatoes, diced
  • ·1 cup fresh mozzarella, diced
  • ·¼ cup fresh basil, chopped
  • ·2–3 tbsp olive oil, plus more for brushing the bread
  • ·2 cloves garlic, peeled
  • ·Salt to taste
  • ·Black pepper to taste
  • ·Balsamic glaze, for topping

Instructions

    Preheat the oven to 400°F.

    Slice the baguette into even pieces and place them on a baking sheet.

    Brush each slice lightly with olive oil, then bake for 6–8 minutes, or until the bread is golden and crispy.

    While the bread is still warm, rub a peeled garlic clove over the front and back of each slice. The crisp ridges of the bread will grate the garlic into it.

    In a bowl, combine the diced tomatoes, mozzarella, and basil. Add olive oil, salt, and black pepper, then gently mix everything together.

    Spoon the tomato and mozzarella mixture onto each piece of toasted bread.

    Drizzle balsamic glaze over the top and serve immediately.
