Biscoff Coffee Chocolate Chip Cookies

Soft, golden cookies with melty chocolate, warm Biscoff spread, and a hint of espresso.

Ingredients

  • ·½ cup butter, softened
  • ·½ cup Biscoff cookie butter
  • ·½ cup brown sugar
  • ·¼ cup white sugar
  • ·1 egg
  • ·1 tsp vanilla extract
  • ·1 tsp instant espresso powder
  • ·1 ¼ cups all-purpose flour
  • ·½ tsp baking soda
  • ·½ tsp salt
  • ·1 cup chocolate chips
  • ·6 Biscoff cookies, roughly crushed

Instructions

    Preheat the oven to 350°F and line a baking sheet with parchment paper.

    Cream together the butter, Biscoff spread, brown sugar, and white sugar until smooth and fluffy.

    Mix in the egg, vanilla extract, and espresso powder.

    Stir in the flour, baking soda, and salt until just combined.

    Fold in the chocolate chips and most of the crushed Biscoff cookies.

    Scoop the dough onto the baking sheet, leaving space between each cookie. Press extra Biscoff pieces on top of each dough ball.

    Bake for 10–12 minutes, until the edges are golden and the centers still look slightly underdone.

    Let the cookies cool on the tray for 5 minutes before transferring to a wire rack.
