Cucumber Salad

A crunchy, tangy smashed cucumber salad with garlic, soy, and chili — the perfect refreshing side.

Ingredients

  • ·2 large English cucumbers
  • ·1 tsp salt
  • ·3 cloves garlic, minced
  • ·2 tbsp soy sauce
  • ·1 tbsp rice vinegar
  • ·1 tsp sesame oil
  • ·1 tsp sugar
  • ·1 tsp chili crisp or ½ tsp red pepper flakes
  • ·1 tsp toasted sesame seeds
  • ·2 scallions, thinly sliced

Instructions

    Lay the cucumbers on a cutting board and lightly smash them with the flat side of a knife until they crack open.

    Cut the smashed cucumbers into bite-size pieces and place them in a colander. Toss with the salt and let sit for 10 minutes to draw out excess water.

    In a small bowl, whisk together the garlic, soy sauce, rice vinegar, sesame oil, sugar, and chili crisp.

    Pat the cucumbers dry with a paper towel and transfer them to a serving bowl.

    Pour the dressing over the cucumbers and toss to coat.

    Top with sesame seeds and scallions. Serve immediately or chill for 10 minutes for extra flavor.
